Encontrando cual es el mejor momento para lograr que los niños consuman más frutas y verduras, lo que permite mejorar su desempeño académico y reducir antojos posteriormente en el día.

En el estudio participaron los estudiantes de los grados de 1 a 6 de siete escuelas en el estudio, tres de las cuales cambiaron el recreo antes del almuerzo y 4 de las cuales continuaron teniendo el recreo después del almuerzo. Durante cuatro días en la primavera de 2011 y 9 días en el otoño de 2011 los investigadores monitorearon la cantidad de desechos de frutas y verduras al lado de los contenedores de basura y registraron el número de porciones de frutas y verduras que cada estudiante consumió o desecho.
También midieron si cada estudiante comió al menos una porción de fruta o verdura.
Después de analizar un total de 22,939 observaciones de los investigadores concluyeron que en las escuelas donde se cambió la hora del recreo antes de almuerzo los niños comieron 54% más de frutas y verduras. También hubo un aumento del 45% en aquellos que consumían al menos una porción de frutas y verduras. Al mismo tiempo el consumo de frutas y verduras disminuyó en las escuelas que tenían el almuerzo antes del recreo.
No tener una comida completa, equilibrada puede dejar a los niños con la sensación de hambre durante el resto de la jornada escolar que lleva a una disminución del rendimiento académico y consumo excesivo de botanas cuando llegan a casa de la escuela. Los investigadores señalan que, “el aumento del consumo de frutas y verduras en los niños pequeños puede tener efectos positivos en la salud a largo plazo. Además, la disminución de los desechos de frutas y verduras es importante para las escuelas y los distritos que se enfrentan a altos costos de ofrecer opciones de alimentos más saludables“.
